Why We Love Sardines
Sardines are one of those humble ingredients that deserve a spot in every kitchen. They’re nutritious—loaded with omega-3 fatty acids, protein, and essential vitamins—yet incredibly affordable. Best of all, fresh sardines are easy to find in the tropics and take just minutes to prepare. Whether you grill, pan-fry, or simmer them, sardines bring bold flavor with minimal effort.
What is Kabayaki?
Kabayaki is a traditional Japanese cooking method where fish is butterflied, grilled or pan-fried, then glazed with a sweet and savory soy-based sauce. It’s most commonly used with eel, but works wonderfully with sardines too. The result? A glossy, umami-rich dish that’s easy to make and irresistibly tasty—especially when served over rice.
🧂 Ingredients
- 4 sardines, butterflied and deboned
- 4 tbsp flour
- 3 tbsp vegetable oil
Garnish
- 1/2 tbsp sesame seeds, ground
- 1 or 2 sprigs of spring onion, finely cut
- 1 lime (optional), cut into wedges for squeezing
Kabayaki sauce
- 3 tbsp soy sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp honey
👩🍳 Instructions

Pat dry the sardine fillets and toss them in the flour, to fully coat them.

Heat the oil in a frying pan. Place sardines and cook over medium heat for about 3 minutes until brown. Turn the sardine over and cook for another 3 minutes.

Turn the heat off and add the prepared sauce. Turn the fish over and on the stove back to a low heat.

Off the stove when the Kabayaki sauce thickens and the sardines is glazed.

Serve the sardines with a topping of the sesame seeds and spring onion. Optionally you may squeeze the lime juice over the sardines.
